Jean’s Peach Cobbler

Adaptable to just about any fruit

This recipe can be used to make peach cobbler, Italian prune plumb cobbler, strawberry cobbler, or whatever strikes your fancy. Be courageous and don’t be afraid to experiment. Feel free to substitute canned or frozen fruits for a winter treat. I’ve used it for fresh peaches and Italian prune plumbs. I’ll try frozen strawberries later this winter.

Most cobbler recipes produce an anemic amount of short bread and use a huge amount of sugar. This one is more robust so the fruit and the breading are more in balance and uses less sugar (but still uses a lot). Feel free to cut the sugar back even more if you want to experiment.
