Jean’s Italian-style Fettuccine Alfredo

Basic Italian-style Fettuccine Alfredo:

Italians don’t use cream in this dish, but I like it just as much as the cream sauces — maybe better.



  1. Bring a large pot of salted water to a boil.
  2. Cook pasta for 2-3 minutes (al dente)
  3. Put butter in a large mixing bowl
  4. Dump in drained pasta along with 1/4C of pasta water.
  5. Quickly toss  pasta and add in the cheese.
  6. Add the remaining pasta water to loosen and form a sauce
  7. Add extras (see below)

Okay, that’s the basic recipe, but it’s pretty bland until you add other things. Here’s a chance to experiment and get creative.
